Another Ukyou thing ... Take Ranma's position as a macho guy into account.
He hates being called gay, as some people often call him because he
turns into a girl, and he goes on about how he's a MAN all the time...
He's very homophobic ...

Just 'cos someone is homophobic does NOT make them 'macho' as such. 
This is taking one facet of Ranma's fears and throwing him in the box 
with the '80 chauvenist types. I'm not gunna start this as a great 
debate with you in public but give the give a break. 

Do you think that his (very, very slow) mind
would be able to get over the fact that 'Hey, that's Ucchan, the boy
I always fought!' and change it into 'Ukyou, she's a cute girl who
dresses like a man all the time'?

I think once he accepted she really was a girl and always had been 
it'd be OK. I mean he knew her when they were kids but really they 
were "sexless" as such. The years she spent as a guy he wasn't there 
and it took a whole two days before he knew she was a she.  

Even if he DID manage to think that,
with his macho image, can you see him marrying someone who DRESSES like
a man all the time? It wouldn't look too good, as a macho guy, to
marry someone who LOOKS like a guy, ne?

Your points are a little thin. She doesn't look like a guy at all, 
she just dresses as one. This is very different to looking like one, 
especially from a homophobic type view. Again calling him macho is 
very stereotypical and taking one aspect of a 'macho' personality 
type and making all of them apply to him.
 

Anything that makes him look
gay/effeminate/not a 'real' man, he'll avoid like the plague. Him
marrying Ukyou will make him think that others see him as not a 'real'
man because Ukyou's not a 'real' woman - she's been a MAN for ten years.

If he loved her it wouldn't matter. Whilst he would nver touch an 
'ex-man', Ukyou is really a woman and his "instincts" would point 
that out. I don't really think that Ranma would care what others 
think about him, it's what he thinks and feels that counts.
