Out of curiosity what exactly would you compair Okonomiyaki too if you were
trying to give an example?  I've never seen one let alone tasted one.  But
i've heard the pizza example before and also the "It's kinda like a pancake"
deinition but i was wondering which is more acurate.

Well Okonomiyaki is Okonomiyaki, it's a Japanese food dish. The
comparisions are done to make it easier for the English reader to
understand, though it doesn't really work. I haven't tasted one myself,
but to me Okonomiyaki is Okonomiyaki, not a Japanese pizza or pancake
(though pancake is more apt than pizza, but not by much...)
