Well.... would he be visiting the Tendos right after this?  It would have
intresting side affects although i'm not to sure you would want to place him
immediatly with the Tendos.  You could have a field day writing a bunch of
adventures for him in between then and up untill he would go to the Tendos
when he is 15 or so.  I believe he was around that age when he met them
originaly.
You would have to figure out if you wanted to have Nadoka to know about this
curse.  And what she would do about it.
Plus as you said if Ranma is still a 2-3 year old in a 16 year olds female
body you might run into some problems with that.  One being that if only the
sex changes then your going to have someone with the mentality of a 3 year
old in a 16 year olds body.  Although i must admit that's not to far from how
Ranma acts anyways... But still you would have to figure out what to do with
that one... I was going to mention another problem but i wont because i'm
sure someone else will spot it.  Take into account that this is talking about
a 2-3 year old boy taking the cursed form of a "16 year old FEMALE BODY" and
you might see what i'm thinking about.
