There are two reasons why fanfic authors choose to ignore this.

1) It's a fact (ask someone, I've been hearing this for a while now) 
that many Japanese schools are beginning to shift more towards the 
format followed by American schools...five day weeks...although not 
sure about the rotation schedule.
2) In Ranma 1/2 fanfics, authors have a handy copout...remmeber, the 
principal is Kunou-kouchou, Mr. "I'm Obsessed With Hawaii and America 
in General", and so most likely Fuurinkan is more like an American 
high school than a Japanese one in many aspects.
