How will Ukyo deal with the fact that Ranma
loves Akane?

Apparently Ranma doesn't love Akane all that much. I think we can
safely assume that Ukyo isn't going to react to her insecurity by
regularly beating up Ranma and eventually killing Ranma and Akane.
Elegant though the symmetry might be. Nor does it seem likely that
Ranma and Ukyo will live a life of quiet desperation, both aware that
Ranma made the "wrong" choice.
Well as I saw it, Ranma's entire decision to leave Akane was
because he was convinced that she would be happier without him. Ranma
cares enough about her happiness to sacrifice his own. It's just that his
conclusions on what would make her happy were based on a moment of
hyperexagerated anger which he thinks is her actual feelings.
Of course in LaWR Zen talked about the year after his previous
fict. THAT time period is what really needs to be examined. The
foundation of most of the fict is in that period, and it's left prety much
to the readers imagination. We have to assume that it was during that year
that Akane's temper was enhanced, and Ranma and Ukyo actually went from
Ranma thinking of Ukyo as a frined and Ukyo thinking of Ranma as her fiance
to the two of them actually being friends.
Well one thing that would be interesting to see is Ukyo actually
geting to know Ranma. In the Manga she basically assembled all her ideas
of an ideal man and slapped Ranma's face on them. As she learns how Ranma
doesn't match her ideas of how he should be she wouln't get violent toward
Ranma, but she might get less enthusiastic about trying to push Ranma from
friendship with her to actual love.
Actually if you want some Bitter End symetry, you might want to
consider the Robert Frost poem, I think the title is fire and ice but I'm
not sure. Basically Ranma and Akane's relationship in BE was Fire. It was
passionate, but the emotion became wild and eventually destroyed them. The
Ukyo Ranma relationship is ice. It's calm and rational, and it's end would
be so calm that it would be impossible to select any one moment and say
"Their relationship ended today."
As I see it the Ranma Ukyo version of BE would have them married,
Ranma helping Ukyo in her shop and practising his Martial arts whenever he
had time off. Then he would either hear about a local SF type torunament
or simply build a Dojo and start teaching. This would slowly take up more
and more of his time and effort untill he was doing it full time. He and
Ukyo would see less and less of each other, Ranma wouldn't mind since he
was doing what he truly loved and Ukyo would get used to it.
