Actually, on two seperate occasions it's been depicted - less than the
dipper. It actually only takes a squirtgun's amount (Jusenkyo soap
storyline Volume 12 (I'm referring to the Japanese style because I'm more
familiar with that) and Bust Battle storyline Volume 34 (you haven't read
up to that yet.)) Ryouga got sprayed once by kids and Ranma got sprayed
once by Happosai.
Seriously, it doesn't seem to take much (viz, the old woman's dipper...
on the other hand, it seems to get Ran-chan pretty damn wet for so
little water).
That's right. The water was also compressed :)
And I believe the water needs to strike the head in order
to activate the change
I would say chin to upper chest area, actually. From the two examples
above, and there's also one more - the sakura mark storyline (Vol. 21)
Ranma washes his face to get off some ink but he doesn't change, but when
he sprays water onto Ryouga, he changes.

(more or less) ankle-deep in the flooded Jusenkyo plain, and they
were in their non-cursed form, so...
