Ukyo would _never_ refer to Akane as "that bitch".  To do so would be in 
distinct conflict with her pleasant persona.  That sounds like authorial
bias using her as a mouthpiece.  Remember, Ukyo is the _cute_ fiancee,
and normally acts like it.  

And this bit:

"I'm perfectly able to take care of myself, and my
parents have no business with me right now. They're
the last people I want to talk to!" I regretted it the
moment I said it, and it was plain that the redhead
knew.
"Never say that in my presence," she said quietly.
"You try having a damn father who believes that
everything down to your dignity, down to your life and
your manhood is worth giving up for becoming a better
martial artist. You try having a mother who might
force you to commit Seppuku if you mess up! You've got
it easier than you know, kid." This was pissing me

...doesn't make a lot of sense.  Surely, Ranma must realise
based on his family history and that many of the people 
he knows that this kid may very well have sound reasons
to be angry at its parents.  What angers Ranma so much about
Futaba saying he doesn't want to talk to his parents?  
Doesn't it make more sense for Ranma to ask why 
Futaba is so mad at his parents?  Or alternately at least 
take a more upbeat and less whiny tone like, "Hey, we've all
got problems, kid.  You wouldn't believe the stuff my old
man puts me through and even my mom can make things hairy,
but y'know, family's family."

If it is Futaba's second semester at Furinkan, why doesn't
he know who Akane is?  Or Ranma?  It is obviously not their
first semester there.
