Were any of the above fics actually finished?

Maybe it's just me, but I'm not sure I've ever read a Ranma/Sailor Moon
crossover non-spamfic where the author actually got to the end of the
story. (Well, maybe a couple of megacrossovers, but not the kind of
thing being discussed above.)

"Destiny's Child," by Fire, got finished. 26 chapters plus an epilogue,
221,000 words total.

You're right, though; big R/SM crossovers (hell, big stories of any kind)
seldom get finished. I still hold hope for a few, though -- e.g. "On A
Clear Day You Can See Forever" by Mark MacKinnon.

There are quite a few complete fic R/SM fics. Here's a list of
complete R/SM crossovers that I keep on my Palm Pilot to re-read (in
addition to Destiny's Child mentioned above):

Aftermath, by Trimatter (first part is pure R/SM, second adds Tenchi).
Some have complained that this one features a lot of cliches, but if
they'd read the end of the prologue, they'd know it was deliberate.

Sailor Ranko, by Fire (it does have sequels by other authors, but each
is a separate story, and most are finished).

Just a Plan, by Poly.

The Best of Times, by Ozzallos

Finishing What You Start, Wild Time, and Destiny, all by Gabriel Blessing.

The Light Hawk War, by Chaos Lord (also includes Tenchi)

The New Order, by Drakuzz

Youma 1/2, by James Thomas.

This is a fairly limited selection (again, it's just the ones stored
on my Palm Pilot), but it shows there are a fair number.
